#Vegan Malted Maca Chocolate Ice Cream Today I’m sharing another recipe from my new book, ‘Coconut Milk Ice Cream’ and giving you the chance to win the ingredients to make it yourself at home! (Ingredients kindly supplied by Detox Your World)

This recipe is my take on malt chocolate ice cream. Instead of malted milk or Horlicks powder, I use maca – a delicious superfood with a natural “malted” taste. And as with all the ice creams in my book, this one is vegan and made using coconut milk. If you like the comforting taste of malted cocoa, then you’ll love this healthy treat!

#Vegan Malted Maca Chocolate Ice Cream Maca powder comes from the Peruvian maca root and boasts a variety of vitamins, minerals, enzymes and every essential amino acid. Delicious added to smoothies – it gives that “milkshake” taste!

Malted Maca Chocolate Ice Cream
 
A chocolatey, comforting vegan ice cream with a superfood twist. Yields approx 2 pints / 1 quart.
Ingredients
  • 720ml / 3 cups full-fat coconut milk
  • 2 tbsp arrowroot powder
  • 20g / ¼ cup cocoa powder
  • 2 tbsp maca powder
  • 120ml / ½ cup maple syrup
  • 1 tsp vanilla extract
  • 90g / ½ cup dark chocolate chips
  • (optional) 1 tbsp alcohol
Instructions
  1. Mix 60ml / ¼ cup coconut milk with the arrowroot powder in a small bowl and set aside.
  2. Pour the rest of the coconut milk into a large saucepan with the cocoa powder, maca powder and maple syrup and bring to a boil, stirring all the time. As soon as the mixture begins to boil, stir in the arrowroot mixture to thicken the liquid. Remove from the heat and stir in the vanilla, chocolate chips and alcohol. Keep stirring until all the chocolate is melted.
  3. Chill the mixture in the fridge until cold and churn.
  4. Transfer the ice cream to a freezer-safe container and freeze for at least 3 hours or overnight.

    I am so bad at keeping up with new trends in ingredients so I haven’t tried any maca powder yet. I had no idea what it tasted like or how to use it. I love Whoppers (like Maltesers), so anything malted milk sounds good to me!

    What a great idea to use maca powder in this ice cream – that’s so interesting. This ice cream looks delicious Aimee – I wish I had a bowl of this to cool off on this hot day here :)

      Hi Katie :-) You’ll need full fat coconut milk (I’ve updated the recipe to mention that) Other milks won’t work 1:1 but if you can’t have coconut milk, I would use 2 cups of almond milk and 1 cup of dairy-free cream. Hope that helps!

    Thanks for the great recipe. I’ve been taking maca powder on daily basis for almost 2 years now in order to boost my energies, and I love the results. But I kind of dislike the maca taste, so I’m always looking for recipes where I can add maca to mask its taste. I will love to try this yummy looking ice cream ,thanks.
