Today I visited my friend Kim’s house. She has the most amazing cookbook collection of anyone I know, it covers an entire wall of her house… And the best part is, she is allowing me to use it as a library, borrowing books whenever I please. Lucky me! My favourite find today was the Mighty Spice Cookbook by John Gregory-Smith. Gorgeous recipes FILLED with flavours, can’t wait to try some of them out.
The exotic taste of these pops make you wish you were relaxing on a hammock on some tropical island… The coconut and lychee’s soft, sweet flavours are awaken by the sharp, zestiness of the lime, giving a refreshing aftertaste.
- 425g can of lychees
- 400ml can coconut milk
- Zest and juice of 1 lime
- Sweetener to taste (I used 2 tbsp agave syrup)
- Combine all ingredients in a blender and mix until smooth.
- Pour the mixture into your popsicle molds and freeze overnight or until solid.
