Lychees, Coconut & Lime PopsiclesToday I visited my friend Kim’s house. She has the most amazing cookbook collection of anyone I know, it covers an entire wall of her house… And the best part is, she is allowing me to use it as a library, borrowing books whenever I please. Lucky me! My favourite find  today was the Mighty Spice Cookbook by John Gregory-Smith. Gorgeous recipes FILLED with flavours, can’t wait to try some of them out.

TiaWhen I got home, my popsicles were ready. I originally planned on this being an ice cream recipe but after getting new popsicle molds, I was eager to use them instead!

The exotic taste of these pops make you wish you were relaxing on a hammock on some tropical island… The coconut and lychee’s soft, sweet flavours are awaken by the sharp, zestiness of the lime, giving a refreshing aftertaste.

Lychee, Coconut & Lime Popsicles
Serves 6
A creamy, refreshing treat
Write a review
  1. 425g can of lychees
  2. 400ml can coconut milk
  3. Zest and juice of 1 lime
  4. Sweetener to taste (I used 2 tbsp agave syrup)
  1. Combine all ingredients in a blender and mix until smooth.
  2. Pour the mixture into your popsicle molds and freeze overnight or until solid.
  3. Enjoy!

      Me too! I’m getting there though, hopefully my collection will look like hers someday… I’m new to the lychee flavour but I’m already becoming obsessed too, it’s delicious :-)

    Thank you for sharing your recipe. I had a question about the lychee. Did you use the juice in the can as well or just the fruit?
